You walk in to a line and a clear set of instructions (see image attached for specifics). The system works, and the line moves faster than expected. Once at the counter, the team was great. Nick and Lalo were friendly, helpful, and kept things moving without making it feel rushed.
We went with jalapeño sausage and beef brisket, plus mac & cheese, rice, and pinto beans on the side. The mac was a win. Creamy, comforting, gone quickly…a HUGE favorite. The rice and the beans were, meh. The sausage had great flavor, though I hit an unexpected crunch along the way that slowed things down (it may have been a bone, I’m not sure. I removed it before I broke a tooth). The brisket was… fine. Not bad, just not the moment I was hoping for given the reputation. That gap between hype and reality is where the rating slips a bit.
Seating is open and a little competitive. If you are with a group, send a scout ahead to claim territory while the rest of you hold the line.
Overall, it is a good experience and worth trying once. In a state full of elite BBQ, this one did not quite convert me. I am still searching for brisket that meets me where I am and speaks directly to the soul.
Moses recommends it as a Texas rite of passage. You have to try it at least once.
